Located in the city centre, in the Boulingrin district, l’ExtrA is much more than just an ordinary gourmet restaurant. It’s a place that embodies the true essence of inclusion and gastronomy. In this article, we invite you to delve into the history of l’ExtrA, from the beginning to its incredible rise in the world of gourmet cuisine, while highlighting its commitment to inclusion.
An inspiring idea : Inclusion at the heart of dining culture
L’ExtrA was inspired by a vision to change the face of the restaurant industry. To help people with mental disabilities who want to find their place in the professional world within the hospitality industry. Their families also want to see them flourish in an ordinary working environment; an opportunity rarely offered today. This vision was part of an inclusive approach aimed at creating a space where everyone could contribute and flourish.
Matthieu Saint-Guilhem, an experienced manager in the hospitality industry, wanted to offer a unique gastronomic experience, prepared and served by a team made up partly of adults with mental disabilities.
Gonzague Peugnet, a former Renault executive, sharing a like-minded vision, transformed his career in 2010 to manage a residence for elderly people. This represented a turning point to focus on a career with more human connection. In 2018, Gonzague discovered ‘Café Joyeux’ in Paris, an experience that deeply inspired him through the values of the café group, again focusing on people with cognitive and mental disabilities. Gonzague returned regularly to the café, inviting his friends to share moments of conviviality. These experiences inspired him to dream big and explore the possibility of creating a similar place in Reims. After visiting similar restaurants in France, starting with ‘Le Reflet’ in Nantes, founded by Flore Lelièvre, he decided to embark on the adventure of creating L’ExtrA.
